Healthy Breakfasts for the Craziest Mornings

I don't know about you, but if I don't prep my breakfast the night before, I'm going to be pretty hungry and cranky in the morning.


 When it comes to the time between the alarm going off and the front door closing behind me, I'm a creature of habit.  Every morning is exactly the same, and if something gets between me and my routine, it can really throw me off, which is why I make my breakfast the night before.  On my way out the door, all I have to do is take it with me.


Most store bought grab-and-go convenience breakfasts are unhealthy and full of sugar and fat (no, a cookie is never nutritious, even when it's labeled as a "breakfast cookie"), but you can change the game and keep your health and convenience with these easily homemade and pre-prepped breakfasts.

1. Overnight oats

I'm sure it comes as no surprise to you that I LOVE my overnight oats.  Truth be told, this is my breakfast 99% of the time.  Cold oats are delicious and there are so many different ways to prep them so you never get bored.  My favorite recipe, though, is for my peanut butter and jelly delight!

1 cup rolled oats

2 Tbsp PB2

1/2 cup strawberries, sliced

1 cup almond milk


Combine all ingredients and allow to soak in the refrigerator overnight.






2. Tofu scramble

If you like scrambled eggs, you'll LOVE tofu scramble - 100% of the flavor and protein without the fat of eggs!  Usually I just toss them in a Tupperware with sautéed veggies so I can heat them up and eat them on the go, but Robyn turns them into a gourmet meal (breakfast for dinner, anyone?) by putting them in a wrap with baked fries on the side!


1 block extra firm tofu, pressed

1 Tbsp nutritional yeast

2 cups seasonal vegetables, sautéed in vegetable broth


- Break up the tofu in your hands so it resembles scrambled eggs

- Spray the frying pan with cooking spray and allow to heat to a medium temperature

- Place tofu and chopped vegetables into frying pan.

- Sprinkle nutritional yeast onto tofu and vegetables.  Stir.

- Remove once thoroughly heated.




3. Pancakes

Pancakes are usually not a breakfast that comes to mind when you think of healthy and easy, but these miracle babies are both!


1 cup rolled oats

1 cup almond milk

1 ripe banana


- Place oats, milk and banana in blender.

- Blend until very smooth like batter.

- Spray frying pan with cooking spray and allow to heat to a medium temperature.

- Pour even amounts of batter onto frying pan.  Flip when bubbled start to appear.


You can add bananas, blueberries, strawberries, raisins or dates to these delicious pancakes while frying for an extra delicious breakfast!  Once completed, allow to cool and then freeze for breakfast all week long!


These recipes are not only easy, but so versatile!  You can take any of these recipes as a base and create your own fabulous breakfasts that are quick and require no morning prep!
